Recipes: Peach Cobbler in a Crunch!

Peach Cobbler in a Crunch

2-4 Organic Peaches, sliced (depending on how many you’re serving)
2 Tbsp. Raw Organic Honey
½ tsp Organic Cinnamon, or a couple dashes if you’re on the fly
Dash or so of Nutmeg
Small pinch of Sea Salt
2-4 Tbsp. Water
2-4 (again, depending on how many you are serving) Udi’s Lemon Streusel Muffins

In a saucepan over medium-low heat, toss the sliced peaches, water, cinnamon, nutmeg and pinch of salt. As it slowly warms, drizzle in the honey. Let it heat just until its warm all the way through, stirring constantly.

If you have to use a microwave (and I’m against them completely, except for heating water, but I’d be lying if I didn’t say I’ve used it in a pinch!) you can do that as well; simply combine all ingredients in heat for 2 minutes, or until all the way warmed.

Once warmed and the water and honey has formed a syrupy consistency (don’t let it come to a boil, that will cause the honey to lose all its raw goodness!) remove from heat and dish into 2-4 small bowls or other desert plate.


Warm the muffins slightly in a toaster oven, or have them already at room temp (they usually come frozen). Separate the muffin top from bottom. Crumble the bottom of the muffin in with the peaches and kind of stir/smooch it all together. Then place the muffin top on top of the peaches, you can break it apart or leave it whole, and enjoy!
